I keep the extra cable coiled up and tied together w/tiny tie wraps or twist ties from garbage bags, and tucked under the aspen or paper towels.
Hera, my adult RTB twisted around it once and tore it out of the unit, but I was able to solder it back together w/o any issues.
You want the IN (unit temp) to be the ambient and the OUT (probe) to be the hot. Less confusing that way....the probe was designed to be outside a window in the weather. :)
Precious likes to knock his over, but the others just leave it propped in the corner of the tank. On my tubs, I melted bigger holes close together, and using a tie strap, secured it to the side of the tub. They can't get to it there. OR you can get suction cups or heavy duty velcro strips and stick in on the glass/side of the tub.

Mine are velcroed to the side of the enclosure on the cool side at ground level - it's pretty darn secure, none of mine have ever been able to dislodge theirs.
As for the cord - I run it outside the enclosure and then back inside on the warm end (keeping all the excess still tied up with the twist tie). I've not had any get caught up in the wire.
