    Here ya go!!!

    ROQUEFORT CHEESE SALAD DRESSING

    1 cup mayo

    1 cup sour cream

    1 lb Roquefort (crumbles)

    1 clove garlic, minced

    1 lemon’s juice

    ½ cup buttermilk

    Mix & chill

Roquefort is very strong... I've made it w/ Blue cheese... and it's just as good.

EVEN better the next day! ;)

OK for those of you who are weight conscious, but love their cheese - here are three tidbits for you.

WalMart sells a "Wee Brie" made by Presidente, individually wrapped pieces of brie (without the rind). It has 8 pieces and 2 points (for those following Weight Watchers) per piece. Mmmmmmmm. Actually, Kroger sells it too, but for about $2 more. Awesome snack when you're craving cheese. So smooth and creamy!!

Laughing Cow Cheese - in the dairy section - 1 point, and it's spreadable - I spread it on my sandwich bread instead of mayo, or just eat a wedge strait. It also makes an AWESOME broccoli and cheese or cauliflower and cheese. Just cook a bag of frozen broccoli or cauliflower in the microwave and drain (the five serving bag) and add five wedges of Laughing Cow Cheese and pop in the microwave for another 30 seconds and then stir. Add a little garlic powder to taste - Oh my!!! Karl hates broccoli, but asks me to make this! - so 1 point per serving.

And finally, Cheese Quesadillas. Kraft makes 2% Fat Pepperjack cheese slices. Pick up some fat free fajita sized tortillas. Spray a non-stick pan with butter flavored cooking spray (trust me, butter flavored gives the best brown for some reason - I've tried them all). Let it heat up and in the mean time, put one slice of cheese on 1/2 the tortilla and fold in half, then brown in the pan. 2 points for this scrumptious treat!

Ditto. I'll definately be trying that dressing. My husband hates blue cheese but he loves the things I make with it just as long as I don't tell him what's in them!

I like cheese with balls and a three day growth...

    Extremely sharp, rip-your-lips-off Cheddar...stinky, sinuous Stilton...mmm

There are few Welsh cheeses that knock your socks off, as well as some of the Midlands region of England...mommy...

I don't care how you serve it, just gimme. Christmas for us is "cheese indulgence" time - buy the best you can get and stuff your face. It's Christmas! New Year's Resolutions take care of the weight gain!

I absolutely love cheese and hate milk.

Thanks for this, Robin! :) I love Lauging Cow Light--each wedge is 35 cal and is great on crackers (I even use it on sandwiches). I'd never heard of the other two, but I love Pepper Jack, so I'll definitely be looking into these things :D

Oh I looove cheese.. yum yum yum.

super extra sharp cheddar.. colby, fresh mozzarella (make your own pizza with it on there... yeah!) and I also really like goat cheese.. sounds gross, but it's actually really good. Kind of like cream cheese with a bit of tang to it.

I love cheeses; worked in a cheese shoppe for awhile, and I was constantly sampling (it was things we were sampling anyway; I didn't steal, lol.) Smoked anything... there was this cheese called Forest, that was AWEsome.. gotta hunt up some soon now that I thought of it!!
Swiss...mmmmm. One of the best is Finlandia. Others I liked were the really expensive Italian romanos.. shame on lowbrow parmesan!
