There are actually shows (like the reptile expos) for breeders of fancy rats & mice...it's more of a "thing" in the U.K. I think? I used to have a book about all that too,
but I've never actually attended such events. (I keep picturing dog shows, where the handler trots around the arena with their dog to demonstrate their conformation,
& imagining someone doing that with their rat on a lead...:rofl:) As pets, rats can even be affectionate, & they're quite social & trainable, so if I went to a rat show, I'd
probably "cave" & come home with a pet...:rolleyes:

In my experience, wild rats are brown, not black. Black is one of the "fancy" colors. I lost a favorite black rat recently. Midnight was fine one day, and dead the next. :(
I have an oddly marked hooded rat, a grey one, and several hairless rats.

"Black rats" aka "roof rats" aka "ship rats" (wild) are black & have a lighter build, while "Norway rats" (wild) are brown (appears as mostly brownish) & heavier-bodied.
The black "fancy" rats sold as pets are often a pure black color, & many have fancy white markings too. I'm sorry you lost Midnight so suddenly. Rats are good
pets but usually only live a couple years at most, & they can get all sorts of things (which is why they're often "lab animals" too). I think the black ones are pretty too!
