I'm using a uth on the hot side, and i understand i could use another on the cool side set to 80, but does that mean that i do not need to worry about ambient temps?

I'm doing exactly what you're doing. I have a 36qt tub as well and I have a UTH heater connected to a thermostat as well as a CHE that hovers above on the cold side to bring up ambient a little. I'm about a foot away and it still warms it up fine. I've been doing this since last year and have yet to melt any plastic. Also, I have a dimmer on the CHE too, and I just adjust the dimmer based on how cold it is in my room.
