That person could let you know if something happens. There's many scenarios where this could be useful. But I wouldn't give the responsibility of your snake(s) to a person who doesn't want to touch it, if that is what you mean? It's not cool for your friend or the snake(s) if something really happens.
To answer the question from the OP: I would leave about 1/4 of the bowl with water, but I bet they would be fine without any in just one week. :)

Yeah, if the bp I'm watching actually got out I would and could safely get him back in the enclosure (without gloves or a snake hook). If the person is actually terrified, the involuntary response will be to run in terror and disregard the snake's well being or lack thereof.
I thought perhaps the person willing to watch the snakes isn't mortified, but just doesn't want to get touchy feely with the pythons. I'm not afraid of lots of things (like wet dog poo) but don't want to grab it with my bare hands either.
