    I believe they are mature/fully grown around 2.5 to 3yrs., but I'm not positive.

    Yes, you have it exactly right. Switch to rats too small and you're skimping on nutrition, but basically once they have a good coating of fur, mice and rats are about equally good in nutrition except that rats provide a larger serving.
