    No, at least I wouldn't eat it as a soup. It would be a mouth full of gloppy cheesy sauce/soup. Maybe diluted down in a cheddar broccoli soup. But not plain.

    Actually a lot of people do eat it as soup. You would dilute it with milk like tomato soup, and serve it with crusty bread. Another good idea I have heard is to dilute it with beer instead of milk and serve it that way. I hate the taste of beer so I haven't tried it that way. I cook a LOT with cheddar soup. You can stir it into any sort of casserole, rice dish, or mexican food. It is also great to add to homemade potato soup or broccoli soup.

    Heather, your dinner sounds divine. I agree go light with the side dish, and you MUST serve fresh bread with such an indulgent dish. Do you have a bread machine by chance? I have a killer dinner roll recipe for the bread machine.

    I bet your house smells good! Also, have you ever been tested to see what part of cows milk that you take issue with? It could be protiens and not the lactose, so goats milk might work for your. Just a thought!

    I don't have a bread machine but I have always wanted one! As soon as I get one I'll let you know so you can pass the recipe this way ;)

    No I've never been tested, I just know when I drink milk, eat ice cream, etc., I got a horrible stomach ache and have to run to the bathroom, lol.

    I personally am a big fan of adding lightly cooked vieggies to what sounds like an already soft (albeit yummy) base. Carrots and Broccoli could be nice additions if still a little crunchy for texture. I personally would have used brown rice (also a little chewier) rather then soft egg noodles but that is just me. Also adding a green herb like parsley can be nice not only for color but also add a little freshness to any meal.

    Just remember to taste.. and taste frequently ;) im always full before dinner because I eat everything as I am going.

    another note. If you cook the noodles and put them in the bottom of a pan, add chicken and soup mixture (already cooked) and some garlic/breadcrumbs on top you can throw it into the oven for a few minutes to get the top crispy... now you have a kick butt casserole.

    Heather hon, if you aren't proud, hit Goodwill.

    I picked up mine, a big 2 pound model, for like $15. And it works like new.

    Dinner was fabulous. Everyone asked for seconds, so I'm guessing everyone else liked it!

    Gale, I ain't too proud to beg! Lol I love thrift store shopping. I'll have to check my local thrift stores, thanks for the tip ;)
