Yes it is on the same thermostat but I just have the probe in the middle of the incubator hanging so that is not an issue. Having two different sizes of heat tape on the same thermostat is an issue when your probe is on one of the heat tape or in a rack system maybe. I will try the bottled water in the bottom and see if that works.

You can also add the bottles to the top if you have room. The more the merrier as long as they don't impede on the air flow.

You need to add the water bottles. Several 1 gallon jugs, or even more 2 liter bottles, if those are easier to stack. Like, a half dozen or more---the more the better.
Water bottles increase heat capacity: it takes a lot time and a lot of energy to heat water by 1 degree. Water does an excellent job of absorbing and leveling out heat spikes.
ps: I have serious refrigerator envy. I was all pleased about upgrading to my husband's hand-me-down wine fridge, and now I'm all jealous.
