If she's a mature female, I seriously doubt that her behavior is due to lack of handling. As a breeder, I don't handle mine as much as the pet keeper, but I don't experience aggression from mine.
However, mature females are heading into breeding season, and are wanting to eat more in preparation and tend to strike a warm moving object first and ask questions later.
It sounds to ME more like she's just wanting to eat more, not that she's reacting to less handling.
