    I wouldn't cut them before I left. They're in a perfect sterile environment inside their egg. I also don't think you'll miss the big event while you're gone, but if you do - they should be fine if they hatch while you're gone.

    The only thing I'd recommend is if you are using a light diffuser in your egg box, remove it before you go, in the off chance that they hatch while you're gone. That way you don't have to worry about them getting stuck in it crawling around. Is that a likely problem? No - but I'd like to remove all risk - just in case.
