Have you tried scenting a rat and sneaking it In there after the First mouse? It may trick her enough and fill the belly at the same time.

She has only taken 1 mouse.. In 3 weeks

Poor baby shes really having some stuff going on mentally. Ok so here's what I'd do. I'd leave her totally alone. For another good week to two weeks. Then try offering more food. At night, and make sure it's really quiet in the house. I don't know if you have a rack. But I have one juvy thats kinda pschizo like that. So I use a black out box. It's just a tub spray painted black. It's worked wonders so far.

Try giving her a hide.

Most people who use racks don't use hides, and I got a breeder female who was this way. Aggressive one minute, scared to death the next. She wouldn't eat, snapped at everything, man was she a basket case. Moved her up to a slightly bigger tub and gave her a hide.
She ignored it for a week, then one day I found her coiled up inside. Gave her a week after she started using the hide, then offered her food. That poor rat never knew what hit it.

Now, not only does she eat regularly, she has all but ceased snapping unless she's in blue or I startle her. It might be worth a try with your girl.
