Unfortunately it is only safe to have a single probe thermostat hooked up to only one enclosure. One of the problems with trying to control more than 1 enclosure with just one probe is if the heating pad in the enclosure with the probe stopped working the thermostat would think its too cold and crank up the power to other UTH raise it to dangerous levels.

Oh... good point. You would think they would give you 2 probes in case you wanted to do 2 different areas...

Oh dear, I apologize. I didn't see the intent was for two separate enclosures.

This thermostat has 4 probes and is designed to control up to 4 different enclosures.http://spyderrobotics.com/products/herpstatpro.html

At the same time if you have 2 digital thermoms and get into the habit of checking them you would see if there was a problem. Not a permanent solution, but if you have new uth's you shouldn't have a problem.
Or you could get a couple feet of heat tape and have both the tanks on one strip of heat tape hooked up to the t stat. 1 heating device on more than one tank.

While I don't recommend having 2 enclosures sharing one thermostat IF both enclosures were the SAME size and used the SAME brand and size UTH I think it would be a better setup having them share a thermostat rather than having both the UTH's just plugged into wall going full blast all the time.
The safest setup though would be either using a thermostat with multiple probes or having a thermostat hooked up to each enclosure.
