There is pink eye, red eye, ruby eye and black eyed Siamese, I make all 4 eye colors.
My hooded Siamese rats almost always lose the stripe down the back, it's still there but very hard to see.
In the end it "should" look like a regular Siamese with dark points and a creamy colored body.

Every Triamese I bred lost their creamy body color to be replaced by the unmarked, white body of a hooded. The only place they were marked (had their points) was where the hooded would have been marked. Maybe it's just the genetics of the rats I was working with?

Same with the rest of my marked Siamese/Himalayans. It even went so far as the marked ones had splotches, half patterns, etc. on their points. I had one blaze Himalayan dumbo that was especially cute. :)

Shes got the red eye gene, rex gene and siamese gene. Her brother in picture is a double rex.

Her brother lost all his hair, grew back a black fuz and is again losing his hair.

She's a pink eye which is much more attractive IMO than a red eye and does some kewl diluting too.

This is my pink eyed Siamese rex coat male I just raised up, he's going to make me some sweet babies.

Truthfully I have found them to be undesirable and have not raised one to adulthood.
I've fed them off as fuzzies mostly but the ones I've kept to young adult size have tended to lose the pattern and still look creamy colored.
My breeding partner has one he is breeding, I'll have to see what color it is.
I only raise up Siamese selfs to hold over for breeding purposes and only the darkest points need apply :P

I have a girlfriend doing the same, except the rats I gave her are both pink eyed double rex.
She says they are all Siamese(not unexpected) lol but also that they are different shades of gold.
Probably the eye color changing the coat color but we will see.

Projects like yours is what keeps me interested in breeding rats :)

This group i tend to sell as pets rather feed them off. The either Rex litter was held back in new groups and what was left over sold to rat lovers.

This is my project with the pink eyed Siamese rex male.
I'm trying to make some fawns and other dilutes with agouti and blue agouti.
This boy carries a boat load of recessives including dwarf, pink eye, ruby eye, red eye and self and I'm still figuring his genetics out since he's only produced 1 litter with 3 other rats before these girls.

He has blue, Agouti, and 2 Blue Agouti girls for this project...

How can that be considered undesirable? I love marked Siamese/Himalayan. :)
