I believe when a ball python turns 5 years of age it is considered an adult. Here, I hope you get this:
Hatchling- 1 day to 1 year old
Juvenile- 1 year old to 3 years old
Sub adult- 3 years old to 5 years old
    Adult- 5+ years old

I think I'm correct, but anyone correct me if I'm wrong.

You forgot yearling and my snake is a little less than a year old but is 500g. I would not consider that a hatchling...

Do BP continue to grow in girth after they've reached adulthood?

It's possible, snakes will continue to grow their entire lives, but after they are adults they will not grow as often and that includes shedding. In their first year they will grow a lot and shed often.

Adult is a relative term. Snakes continue growing well beyond sexual maturity, which is often used to determine "adulthood".

Males can reach sexual maturity much younger than females.. and although females are sexually mature at as little as 800 grams, you probably know that most people suggest waiting until they are 1500g or more before breeding.

1500g is often the number quoted for adult female size, which on average is around 2 years old or so. HOWEVER, females will put on plenty of length and weight beyond this point. 5000g, 6 foot females are not unheard of but rare, and it certainly takes more than just a couple years to reach that size.
