Just handle him sort periods at at time, He has to get acustom to being handled. He's just not used to it yet.

that is what they're going to do until they are convinced they arent going to get eaten. Balling up is where they got their common name from. how long are you holding him before you put him back down? have you fed him already? i think that would be the most important thing; to make sure he's eating consistently before you start handling.

but if you do want to handle him this is what i would recommend, is slowly remove him from his enclosure if you're going to handle him and let him know you're coming. i lightly tap on my girls hide to let her know im there. sometimes she balls up sometimes she dosent.

once you have him out, sit somewhere warm and comfortable and just let him sit in your lap or in your arms. try to be still and quiet until he comes out from his ball. if he's real little he may stay like that because he feels it is safer. short handling sessions for 5-15 minutes are good until he becomes used to you, then let him back in his enclosure.

See if you keep him out longer if he will unball and move around exploring hes just scared of you right now he thinks you are going to eat him so just chill out and he will unball and start to move around, just nice slow movements nothing quick that would scare him also, do you disinfect your hands? or wash them before you hold him?
