I've run into a problem with my thermostat

This is a problem I have encountered. It can lead to false temp readings.

I have an accurite with probe. The probe is inside the hide on top of the substrate above the under tank heater. Well, I have found that sometimes when my ball is in that hide that the temperatures spikes to over 100. At first I was worried but I determined it was because she was moving the probe around and laying on top of it. Thusly the heat from her body was reflected back to the probe causing it to display a higher tempature. Moving the prob back into place fixes the problem.

So if you enounter an unusually high reading on your probe, check to see where ther probe is.

Or maybe she's pushing it directly against the glass where the reading is higher? Maybe you should check to see if the temp on the glass is too high, just to be sure.

Why are you setting your Accurite probe on top of your substrate. They have great sticky stuff on the probe that stick it to the glass. IMO you need to actually stick it, or it won't get the correct reading. If you're reading 100 on top of the substrate, I can't imagine what it is under the stuff.
