    Cheese - Glorious Cheese!!!
As I'm sitting here snacking on some crackers and brie, just thought I'd see what some of your favorite cheeses are and your favorite things to eat it with, or ways to prepare it.

I lean to the more mild cheeses, not a huge fan of the swiss type cheese, although I can do baby swiss.

Smoked gouda, straight-up. No crackers, no bread, just sliced. Mmmmmm....

My favorite swiss is Loraine Swiss, nice and mild without that nasty aftertaste but I haven't found any here in WA :(
Other cheeses include Provelone, Munster, Colby, Colby Jack, Havarti, Bleu cheese (great in salads and as a breading ingredient in some recipes)....

Pretty much there are very few cheeses I don't care for.

Thanks Robin, now I get to go raid the fridge for some string cheese. :p

I'm kinda boring. I like my Sharp Vermont Cheddar the best, probably. Brie is delicious, too... Wrap it up with an un-baked french bread roll, pop it in the oven, and viola! Hot, Brie and bread goodness :)

Lately I've been a part-skim Mozzarella person only--watching the calories ;) It's a little boring, but when ya -need- cheese on something, it's good enough.

Blast you Robin!!! :evileye: I've been trying so hard to resist making some swiss cheese fondue, and I had just gotten it out of my mind. Dang and dang again. I'm the only one in the house who likes it. Plus there are no Granny Smith apples in the store right now, and those are a must have for dippings! (and of course with some lovely pumpernickel and other assorted breads)

As for other cheeses, I'm very fond of Colby! A nice sharp cheddar spread is great too. I think I may have gained 5 lbs just from reading and thinking about all this cheese.
