I know this sounds silly, but do females lay unfertilised eggs without mating like chickens do?

In general it is believed that python physiology requires the act of courting and copulation by a male to trigger ovulation in the female.
While many clutches may include unfertilized eggs, or consist of entirely unfertilized eggs this is most likely the fault of the male or the breeder than anything to do with the female.
The only monkey wrench in the mix is recorded instances of parthenogenisis in female pythons ... It is EXTREMELY rare but has been recorded a couple of times ... I know of instances with fertile eggs, but I'm not sure about unfertilized eggs.

Re: Eggs
What are some of the things that a breeder can do to ensure fertilized eggs?
besides:
proper weights/age of both animals
Temperature of incubator...

Temperature of the incubator has nothing to do with it ... they are fertilized (or not) long before they ever see the inside of a bator. ;)
