So my new banana enchi is if not comfortable at least reasonably calm when held, but he strikes at our hands when we're changing his water or picking him up. With gentle handling this should subside right? Is there any way I could speed this process along, or is it just a function of time?

Babies often strike a lot, as they get older and bigger it'll subside.

Time, weight gain, proper husbandry and proper feeding will do the trick.

Oh good, I was a little worried for a moment. My other little guy was pretty lazy right from the start, so I'm not sure how to deal with this one.

Depending on when you got him he is probably still settling into his new environment and may still be a little freaked out.

He will chill after he settles in. Just make sure he feels safe and secure and he will start to calm down.
