What should I breed my pastel to?
I want to start breeding and I want to get a nice breeder size female morph for my big boy. What should I breed my pastel to? And does it matter if it is lemon pastel at all?

Would that choice not be up to you, and depend what you would like to hatch, or start working towards?

It all depends on what you want to produce.

A lot of possibilities for bright morphs with pastels. Breeding it to something else that has pastel in it can get you super pastels which are quite bright. Can breed it to a spider for bumble bees or killer bees which look very nice. Or go with some recessive morphs like ghosts to give it a nice faded bright color. There's a lot of interesting things to work with.

for bright color : fire, vanilla, enchi, desert. desert ghost, orange dream. those will also reduce the patterns. calico, spider and pinstripe will also have a brightening effect while disturbing a lot the patterns.

But a lemon pastel is quite a weak male in term of genetic. i will no breed him except if he is exceptional in colors and patterns. usually we put high genetic male to lower genetic females because a male can be breed to 4 to 8 girls per seasons.
But this year, my best snakes in term of quality were a lemon pastel enchi , a super pastel ( lemon to citrus) enchi and single gene Orange dream. ( i had around 15 triples and quads hatchlings this year.

So if your boys worth it , chose a top quality Fire or enchi and go for it.
