Our female that we have been pairing with a male for the past few months has gained 200g in the last month. She went from 1693g to 1895g? Is this ok?

200g is a lot, but I wouldn't say massive. Remember the 200g is in relation to a 1700g snake (well, last month at least) so that's about 10% of her body weight. I had a hatchling go from 60g to just over 180g in one month eating appropriate meals every 5 days, so she tripled her weight! I'd say your girl is just putting on a little extra weight for breeding season.

In 219 months one of my girls went from 130 to 2300 (my scale only goes to 2300). She is just the most aggressive (typically lands outside the drawer and I have to set her back in) constant (3 times per 2 weeks) eater I have.
She has never seemed anything but healthy to me.

She is a very aggressive eater and will eat multiple rats if I Let her. My concern is she is becoming overweight and will cause her to produce slugs

Putting on weight before breeding season is normal, however without a picture no one here can tell you if she's overweighted not.

I have an Enchi who's the same way, practicaly jumps out of her tub to eat.

My big female albino just gained approx 400g this evening by eating 6 med rats!;)

100-150g a month is average around here.... hatchlings to adults ;)
Figure your female lays eggs someday and drops a 600g clutch. She only has about 5-6 months to get that weight (and more) back on before you start pairing her again.
We also have plenty of July 2014 hatchlings well into the 300g range already.
