Some odd things going on with my girl please help!
Her behavior hasnt been all that different, but she seems as if she doesnt want to coil. When she lays under her hide, she doesnt ball up like normal, she lays kind of half coiled. http://img.tapatalk.com/d/14/07/07/8y3ytazy.jpg
She also has something weird going on with her eye all the sudden. She just ate a few days ago, and is going to shed soon. Shes in the period before her eyes go blue.

Make sure your humidity is around 55% normally and bump up to 70% when you see signs of impending shed until she actually sheds. What are you using to measure humidity?

Could running a humidifier in my room constantly help me keep my humidity up?

Just mist the tank. As far a humidity in tank, you can cover part of the mesh top with damp towel.

The dented eye is something worthy of a vet visit. Is it a flap of skin or is the whole eye dented inward? Is it swollen?

As for not balling up, sometimes when they're feeling unsafe or insecure they will 'cruise' a lot more than normal. It's looking for a safer place than the half log you provided. Plenty of tips on this site regarding proper hides to make your snake feel safe and secure.

It seems like the whole eye is dented, when compared with the other side

Raise your humidity and/or soak him. Dented eye-caps are often a symptom of dehydration.
