When to panic and start cutting
so it's day 60 and not one has even attempted to so much as peak out of an egg.
the incubator's temp/humidity were checked 3 times a day, not one spike/dip and
the humidity stayed above 96/97% the entire time.
So, when do I panic and start cutting?!

I don't think you need to panic, but if you are confident about the temps, you could cut them. With lower temps, I have had clutches take more than 70 days.
