If you're feeding 90+ gram rats to your 1000 gram snake once a week, you're right on track. Are you feeding in enclosure or out?

What are your temps and humidity like?

I'd had luck getting in to pick up a snappy baby (or take a prey item from a snake to rewarm) by picking up a hide (usually the one they're under) and kind of moving it towards their face just to make them startle out of strike mode, then pick them up from behind. He could just need more handling and once you're holding them, snakes tend to calm down.

All temps are good humidity is a bit of a pain but keeping on top of it now as I use a ceramic heater it dries out the viv but have that sorted now and it is handled just recently it is acting a bit odd.

Hm. Then I've got nothing. He might just be grumpy. They do have personalities and bad days (weeks). I'd suggest to just keep handling and see if he calms down again.
