I'm curious why?
Since it would essentially be setup the exact same way that ARS and Freedom Breeder racks are setup.
Every level in those racks has individual strips of flexwatt that is then plugged into a power strip and there is only a single probe on one level.

I'm not terribly fond of those either, way too many variables that aren't being monitered. All it takes is 1 to malfunction. If it stops working you might not even notice, but if it overheats you could lose everything. It is a question of what risks you are willing to take.

You could use the one Tstat. However, make sure you do not exceed the wattage levels for your VE 200. The temp fluctuation is something you will need to decide if you can live with. I personally use multipe Tstats, only because I am overly precautious.
