is it ideal to use clay pots as water dishes to raise up the humidity in my tubs?

Yes I did quite a while back. I used glazed under flower pot trays shallow and large I still use some of them. They work great, unglazed leak like a sieve, although when they are wet they 'give back' the humidity slowly.

I used a flowerpot hide that I used to soak in water overnight before I placed it in the enclosure I'd swap it out (I used 4) every 2 or 3 days it works like a humid hide. I came to that conclusion and placed a humid hide in the enclosure. Than I changed substrates (ecoearth) and side turned the tank I was doing that in and the issues I had with the open top tank cleared up.

same thing here I use inverted pots (unglazed) and soak them in the afternoon and then put it back, the thing is in my area it dries up within a couple of hours. maybe I should try soaking it overnight :)

my concern with unglazed clay pots is they will be hard to sterilize. The porous surface is a great place for bacteria to grow.

Everything is hard to sterilize. Sanitizing isn't that hard however, just boiling water will do it. A good scrub and then pour boiling water over it and let cool.
