Herpstat or Helix for incubator?
I am building a new incubator out of a really nice wine cooler I picked up on craigslist (I'll post pics once complete) and wanted to know which stat would work best? Which model would be best for this application too?

I am a big fan of Herpstat and use them for my racks and incubator, the only difference is that I use this one for my rack http://www.spyderrobotics.com/products/herpstat.html since you don't need the ND feature for incubator.

Can you show me some pics of the Herpstats hooked up to the incubator? I have seen the Helix hooked up before, but never the Herpstat. Just curious.

Its completely up to you. They are both great stats.
I use both, and am very happy with both as well. I use a Herpstat pro for the racks and a Helix dbs for the incubator. Not because I would choose one over another because of how well they work, but just because I only need the one probe for the incubator and it was easier than trying to run a Herpstat probe across the room to the bator.
