Great chicken salad recipe I just made up..try it!!!

Been on this avacado kick and got to thinking.....so I decided to try a new twist in chicken salad.

You need:
1 barely ripe avacado
1 large boneless chicken breast cooked (I season it while cooking)
quarter of a lime
about 1/4 cup mayo(or to taste)
about 1/4 cup medium chunky salsa (or to taste)
salt and pepper

Cut the chicken into 1 inch pieces, and the avacado into 1/2 inch cubes.Put in a large bowl. Squeeze the lime over the pieces and toss. Add the salsa and the mayo, and mix the ingredients well.(you can add more, if you like more) Salt and pepper and mix to taste. It turned out really good!!! very tasty. If you like spicy, you could probably try hot salsa instead. Let me know how you like it if you try it!

Sounds really good. My kitchen skills are zero. Lol. How do you tell if an avocado is ripe?

You give it a squeeze. If its squishy, its really ripe. If it's soft, its ripe. If it's firm, it's not quite ripe.

I have to try that... but the problem is I cut into the avocado, then I see a spoon and some pepper, and then somehow the pepper gets on the avocado, then the spoon takes it my mouth, then I am left thinking "WHO ATE MY AVOCADOES!!!"

:rofl::rofl: how true!!! My downfall is turkey bacon and advocado....oye...ya cant stop with just a couple of slices....ya gotta put the whole thing on...lol

That sounds so good apart from the salsa. Lime mayo chicken sounds niiiiiiiice!!! I love lime, im addicted to thai green curry ATM lol
