Chicken Salad - How Do You Make Yours?
During the dog days of summer, there's nothing more refreshing to me for lunch than a wonderful fruity chicken salad. After just whipping up a batch, here's how I make mine:
1 whole rotisserie chicken from the deli - skinned, de-boned and cut up into bite sized pieces (the rats get the carcass as a treat)
1 whole fuji apple cut into small pieces
1/2 to 3/4 cup (I don't really measure, I just pour) Craisins
Green or Red Grapes, cut in half - again, I don't measure, I just cut and add them until I have as many as I want
1/3 cup or so of almonds (slivers or sliced) toasted
Celery salt to taste
Mayo to moisten (I use Hellman's Light)
Mix it all together and try to stay away from it for several hours to allow the flavors to meld together.
YUMMY! I already can't wait for lunch tomorrow!

I never make it but I love it. Grapes are the best thing ever in Chicken salad.

WOW! Your chicken salad sounds way better than mine!
Mine is one large can of chicken rinsed
Miracle whip
chopped up boiled egg and celery
a little sweet relish, mustard, black pepper and bacon crumbles if you have them.
I like it served on toast with tomato and lettuce

Add chopped celery and pecan halves to your recipe along with the previously mentioned grapes and you have my recipe. Minus the almond slivers of course. We also make it substituting Walnuts. All good.
