Herpstat one or better. The probe accuracy is very high. It has over and under shut down. Full proportional either pulse or dimming. In addition a mechanical relay that has a higher chance of failing off than on.
The second choice is the ecozone, also high accuracy, it doesn't have the same under temp shutdown but it has text email alerts as well as Internet reporting.
It is cheap ($109)
Can be flush mounted into an incubator or be set on top
Is as accurate as thermostats get

Was designed specifically for incubators
Bacically this thing has everything you could possibly want in an incubator thermostat and nothing that you wouldn't want (to keep costs down). The competition (VE thermostats/helix thermostats) are using outdated technology at a premium price. They don't have the safety features that the herpstat intro + does yet cost just as much if not more. The other thermostats on the market (ranco/Johnson's/hydro farm) aren't accurate enough to trust as a thermostat for an incubator.
Herpstat! I'm using a herpstat 2. I was using a ve-200 on my dry run and the temp swung from 82-90. Holds a steady 89 with the herpstat
I don't think I would blame that kind of swing on the stat?
Like I said mine has been holding 89 degrees for three years, Yes there was some swing on my mini-fridge bator but none on my huge glass door freezer.
