How accurate ARE herpstats?
Well I'm about to order a herpstat 1, and had a question. If the stat is that accurate, would I just place it on the inside of the tub, where the acu-rite thermometer is, eliminating the need for the thermometer?

Herpstats have an internal resolution of 0.1125 °F and are accurate to ± 0.9 °F
So yes putting the herpstat probe directly into the tub would be the most accurate regulation of the heat source, and would for the most part eliminate the need for a thermometer, but there are risks to putting the probe inside the tub. If the probe gets moved by the snake your $100 + thermostat is 100% useless
Personally I would keep the probe on the outside of the cage and use thermometers to monitor the in cage temperatures.

So for a guy with 2 snakes on the same strip of 11"flexwatt, which would be better...herpstat 1 or herpstat 1 basic?

The herpstats are very accurate I have very good thermometers and have tested 19 probes against a platinum science grade thermometer and in fact the worst was about 0.7ºF in error. I have never had one as far off as the specs claim possible. So yes you can use an interior placement.
The question is should you? The answer is yes IF your temps vary dramatically with the exterior placement. You should try the probe between the heat and tub first. In some cases this produces unstable temps (due to radical shifting ambient temps). In these rare cases there are a few criteria to meet. I would never suggest this with a heat source that unregulated exceeded 100ºF period. Most flexwatt does and the new heat tape absolutely does. This means a different heat source (ultratherms for example). The probe must never move if a child or dog moves it it is just as bad as a snake. In no case should a probe move easily. They MUST be FIRMLY fixed in place, no exceptions! I use hot glue to fix it in place. I would also suggest either a fail safe and a t-stat that has high and LOW shut down set points (herpstats). In the case of a probe becoming cool quickly (pulled free of the heat) it will power down rather than turn up the heat to try to heat a probe that is not where it should be.
These criteria met interior placement works well and safely, the heat doesn't get hot enough to burn, the Tstat will shut down if the probe is pulled loose and if it fails (triac) the fail safe will shut down the heat as well. The chance of a short at the same time two thermostats fail are exceptionally if this situation exists it will not matter where the probe is.

The herpstat 1 is a much safer thermostat. For that alone I would go with the 1 over the basic.
