Grrrrrr! I can't figure this out! (Rat genetics)
Ok. I have searched high and low, and I'm still super confused. I've tried punnet squares without luck, so I'm giving up and letting someone else figure this out, or at least explain it to me.
I have a female black variegated dumbo, and a top-eared, pink eyed himalayan male (very light points). I'm trying to figure out what their potential babies' colors will be. Can anyone help me out?

Probably mostly black and white assorted patterns, and possibly a few Himalayan, but I am not 100% sure. Whether or not they have dumbo ears will depend on whether the male carries it in his genes. I have been doing this for years and can still never guess what I am going to get.
Ball Pythons:
0.1.0 Bumble Bee- Schnapps
0.1.0 Pinstripe- Penny
0.1.0 Super Cinnamon- Cleo
0.1.0 Albino- Daiquiri
0.1.0 Low White Piebald- Hershey
1.0.0 Low White Piebald- Reese
1.0.0 Paradox Super Cinnamon- Dash
1.0.0 100% Het. Albino- Jester
1.0.0 50% Het. Albino Jake

All babies will be het dumbo unless the top eared rat carries dumbo, then the babies would be by odds 50% dumbo and 50% top eared.
Without knowing all of the recessive traits the rats carry it's hard to say exactly what colors would come up.
Wild guess based on the black rat not carrying Siamese:
Black rats
Beige rats (black rat diluted to beige by the red eye trait)
PEW aka Pink eye white
Champagne(Pink eyed rat that is sort of beige colored.)
If the black rat carries Siamese then you could also make Siamese.
Variegated is caused by the high white gene which is recessive, if the "himi" doesn't carry high white you won't be making more. If it does carry high white then you might make more, or blazes, or head spots, etc..
My biggest question would be are you sure it's a Himalayan? or could it be a Siamese?
Himi's are white coated and Siamese are creamy colored.
