    y'all brilliant! thank u! i guess i could improve my mise en place and take a more measured approach and throw the powdered stuff into ramekins. i have a salty palette, so i like seasoning and used eyeballing and just throwing stuff into the pot. i never woulda thought that a lil steam from cooking would have such an effect and cause clumping.

    I don't really measured either, I just toss it in, shake to mix, sniff it, and if it smells good dump it in. But doing it over the pot directly ruined a number of different spice bottles back in college, so I keep a small shot glass or one of those soy sauce bowl sized mixing dishes hanging around for spice mixing.

    I also spice by eye...I just usually shake it into my hand and then dump into the pot.

    Slight correction, if the pot is still cold, I do shake directly into the pot.

    Your clearly not using it enough if it has a chance to clump up. Best cure for this is to add more and use it more often..... No vampires near me.
