Eggplant. Just can't get into eating that. I can do greens, legumes, raw cauliflower or broccoli, mushrooms, brussel sprouts. Not eggplant.

There's different kinds, & I grew some Japanese eggplant a few years ago out of curiosity (it wasn't something I grew up eating either). It was pretty good...I chopped
it up with peppers, onions, sweet potato & a few other veggie things, tossed all in olive oil & seasonings, then baked...it was yum.

It's pretty (yellow & deep green) & the sweet corn balances the kale. This is different than mixing with other greens, where it dominates.

That's right. Everyone knows the proper way to prep veggies is to push them down the garbage disposal then grab a steak.

So how do YOU cook kale? Saute I suppose? that's ok too...but I happen to love it steamed via M/W with added corn, so to your culinary heart,
(I eat kale raw more often than I do cooked anyway-)

I can just about get some broccoli down IF it’s steam cooked to death and covered with apple sauce , mint jelly and lashings of gravy ... then I can’t taste or feel the texture of it
